The Mule Ears sit far enough off the road that you end up shooting them long, and at that distance the two spires flatten against each other and the name stops needing an explanation. Presumably that's how they got it, before anyone was writing things down.
They're what's left over. Two dacite plugs from the Chisos volcanic complex, roughly forty million years old, and the desert spent all that time wearing down everything softer around them until only the hard cores were standing.
